This is one of our favorite to-do-list items. Thanksgiving Dinner (with all the trimmings) is our favorite family feast of the year. Being able to create something like a truffle-stuffed roast at the last minute – using just a carving knife and a couple of basic tools – is a cook’s best friend. We have run all kinds of fancy slicing and dicing machinery at this chore, and over all these years, we’ve learned that the very best way to do this chore is with a simple, big, honkin’ carving knife or two, and a step-by-step plan of attack. We wish we could give you a recipe, but we don’t work that way, we prefer to let you in on all the insider secrets, then you can apply them to whatever recipe you might want to work from.
