Thin strip steaks are versatile and ideal for a variety of Chinese dishes. However, they are extremely thin, about 1/8" thick, and cook very quickly. Even over high heat it takes no longer than 2 minutes to cook them.

The next best choice is flank steak. It has enough fat, gristle, and connective tissue that will become nicely chewy when it's cooked.

Can I use sesame oil to stir fry?

I do have to say that using sesame oil to stir fry is one of my favorite uses for it. Most of us still use vegetable oil to fry, but sesame oil adds a nice flavor to the vegetables. Plus sesame oil has a higher smoking point than vegetable oil, meaning you can cook at a slightly higher temperature without worrying about it prematurely combusting. I always add a little sesame oil to my stir fry dishes.

As with other oils, place sesame oil in the refrigerator or freezer if you plan to keep it for more than a month. The refrigerator or freezer will keep the oil fresh for up to nine months.
